Used in bakery production for dough processing during the preparation of bagel products.
Description of Equipment
The dough is fed onto a continuous conveyor belt in separate pieces weighing no more than 10 kg. During rubbing, the dough structure is improved, air is removed from the dough, and mechanical impact on the gluten occurs.
